Tease your dog pulled pork

Want something easy and boy do i mean easy and delicious for dinner TOMORROW? (Why tomorrow you ask? You have to give your roast time to soak in all the spices) 

Pop into your local grocery establishment and head straight to the butcher section. Pick yourself up a 3-6 lb. pork roast (aka Boston roast, aka picnic roast, aka port butt, aka pork shoulder. Why do they have some many names for the same cut of meat?)

While your there grab yourself a six pack, you deserve it for putting so much effort into this meal. When you get home unwrap that beautiful hung o meat. What I use for a rub is a store bough BBQ blend that i spice up a little. I add brown sugar, garlic, and lots of pepper. Rub that rub all over your roast and then wrap tightly. Mine looks like this . . .

Ok now that you know how good my camera skills are put that in the fridge overnight. When you wake up in the morning pull it out and let it rest on the counter while you get ready for work.

 Before you leave the house pop it in your crockpot with the fat side up (this will allow all the fat to melt over your roast and keep it nice and moist) and set to low and leave for work.

The reason I call it tease your dog pulled pork is because the roast will cook the whole time your gone and your house will fill up with the wonderful smell of pork. 6, 7,8,9 hours is okay because the longer it cooks the more tender it will be.

When you get home and take the lid off you will notice that the pot is about half full of juice and liquid fat.

I pour off 95% of the liquid and retain 5%. You could keep it but i have yet to find a use for the leftover liquids. I personally remove any fat that remains on top of the roast but you can stir it in depending on your preference.

This is also where i will remove the bone and cool it before rewarding my dog (yes pork bones are ok for dogs to eat.) This roast will be very tender and you really don't need to pull it you can just take a big wooden spoon and stir it all up into stringy bits.

Add your favorite BBQ sauce and stir untill well coated. I let it cook for another 30 min and your ready to eat. If your like me you'll need some coleslaw to go on top of your pulled pork sandwiches.

Sweet Potato and Carnitas Hash with Salsa Verde

Ingredients 1 Cup of Leftover  Carnitas 1 Large Sweet Potato Diced 1/4 of White Onion 1/2 Roma Tomato 4 Large Eggs 1/2 Cup of salsa verde Salt and Pepper Cilantro for garnish Instructions Preheat oven to 400 degrees.  Heat up a cast iron skillet on medium heat.  Add the leftover carnitas to the preheated skillet.  After crisping the pork, remove from the pan.  Add diced sweet potato.  Cook for approximately 10 min.  While that is cooking, in another pan crack 4 eggs. Add salt and pepper.  Leave the eggs sunny side up, they will finish cooking in the oven.  After the sweet potatoes have cooked for 10 min, add the carnitas meat back to the skillet.  Add onions, tomatoes, salsa verde and eggs on top. Bake for 10 min.  Remove from oven and garnish with cilantro. 

Guacamole

Ingredients 1-2 Avocados 1 Teaspoon Granulated Garlic 1 Teaspoon Onion Powder Salt and Pepper  Tortilla chips  Instructions Cut avocado in half lengthwise. Remove pit. Mash avocado in a bowl and add the garlic, onion, and salt and pepper. Serve with tortilla chips.  Sure you could get all fancy and add onions, tomatoes, cilantro, and lime but this version my family begs me to make at every family function and I've never had leftovers.
